
Microgreens are often associated with upscale restaurant plating, but they're just as useful in your home kitchen. Here are five practical ways to work them into everyday meals.
1. On Toast
The simplest application. Layer microgreens on avocado toast, egg toast, or ricotta toast. Sunflower microgreens pair brilliantly with avocado. Spicy mixes add zip to cream cheese.
2. In Smoothies
Mild varieties like pea shoots and sunflower blend without affecting flavour much, while adding a concentrated hit of vitamins. Add a small handful to your morning smoothie alongside spinach or kale.
3. As a Salad Base
Replace or supplement your usual salad greens with microgreens. They have a more intense flavour — a little goes a long way. Mix with romaine or arugula for balance.
4. On Top of Soups
Add as a garnish just before serving. They wilt slightly in the heat, releasing flavour. Radish microgreens on tomato soup. Pea shoots on pea or leek soup. Broccoli microgreens on cream of broccoli.
5. In Wraps, Sandwiches, and Tacos
Replace or supplement shredded lettuce in any wrap or taco. The crunch and freshness of sunflower microgreens is especially good in fish tacos. Spicy mix transforms a simple turkey sandwich.
The rule of thumb: use microgreens anywhere you'd use fresh herbs or delicate lettuce, and don't apply heat — add them last.
